Comfort Food: Marry Me Chicken

My friend had a health scare and it took a full week to get answers. Naturally those 7-days were very scary for her, and it impacted me very deeply. Thankfully in the end either God did a miracle or the health professionals made an error. Either way, she was very shaken by the entire experience.

Because I was in constant contact with her during that 7-day period, I knew she could use a mental break from worrying about what to make her family for dinner. So, I made my Marry Me Chicken recipe for her and her husband, and my Greek Meatballs (I used beef) for her children, plus some sides. Two days later she let me know that she personally ate the entire dish of chicken herself over that 48-hour period. She was obsessed!

Every person I’ve had the pleasure of making this for has raved about it. I’ve even made this for someone who hates tomatoes of any kind, and they devoured it! It’s proven to be a dish that is widely loved, which is amazing since it’s SO easy to make!

One-Pan Marry Me Chicken

Seven ingredients come together to make one of thee best Italian dinners and it takes 30-minutes to make! Chicken, sun dried tomatoes, basil, and cream – and it tastes like a dream. 馃檪

Ingredients
  

  • 2-3 tbsp butter, unsalted
  • 1.5 lbs chicken breasts, boneless, skinless, chopped in 1/2" pieces
  • salt, to taste
  • pepper, to taste
  • 4 tsp garlic, minced
  • 3/4 cup chicken broth, low sodium
  • 3/4 cup heavy cream
  • 1/2 + cup sun dried tomatoes, chopped or sliced (add as much as you'd like)
  • 1/2 + cup parmesan cheese, grated (add as much as you'd like)
  • 1/4 tsp dried oregano
  • 1/4 tsp ground thyme
  • 3 tbsp dried basil
  • spinach (optional)

Optional Additions

  • 1 tsp crushed red pepper flakes
  • fresh basil, fresh leaves cut into strips

Instructions
 

  • COOK THE CHICKEN: In a large pan over medium/high heat (6 or 7), heat the butter. Generously season the chopped chicken pieces with salt and pepper and add them to the heat oil. Cook until chicken is golden (about 10 minutes). Remove the chicken from the pan, setting it a side for just a moment.

  • MAKE THE SAUCE: Bring the heat down to low/medium heat (4 or 5), add garlic, and cook until fragrant (1-2 minutes). Add chicken broth, heavy cream, sun-dried tomatoes, parmesan cheese, basil (and thyme and red pepper flakes, if you'd like).
    4 tsp garlic,, 3/4 cup chicken broth,, 3/4 cup heavy cream, 1/2 + cup sun dried tomatoes,, 1/2 + cup parmesan cheese,, 1/4 tsp dried oregano, 1/4 tsp ground thyme, 1 tsp crushed red pepper flakes, fresh basil,, 3 tbsp dried basil
  • Add the chicken back to the pan, and season with a bit more salt, if needed, and bring to a simmer for 3-5 minutes (add spinach here if using). Serve over pasta, rice, or quinoa, and enjoy warm! 馃檪
