COOK THE CHICKEN: In a large pan over medium/high heat (6 or 7), heat the butter. Generously season the chopped chicken pieces with salt and pepper and add them to the heat oil. Cook until chicken is golden (about 10 minutes). Remove the chicken from the pan, setting it a side for just a moment.
