Greek Tzatziki Sauce

Tzatziki sauce is most famous for topping a delicious gyro, but it's a sauce that can be used on bread, as a dipping sauce for vegetables, for appetizers, etc. It's rich cucumber and garlic flavor makes it absolutely delicious on so many things!

Ingredients

  • 2 cucumbers, skinned
  • 1 1/4 cups Greek yogurt, full fat (or whatever you can find)
  • 1 tbsp lemon juice, freshly squeezed
  • 1 tbsp olive oil (you can add up to 1.5tbsp for a richer flavor)
  • 1 tbsp garlic, minced (up to 2tbsp depending how garlicy you like it)
  • 1/4 tsp salt
  • black pepper, to taste

Instructions

  • PREP CUCUMBER: Cut the cucumber in half lengthwise. Use a spoon to scrape the seeds out, and all the watery contents in the middle. Use a cheese grater to grate the cucumber into small pieces. Take the grated cucumber, place it in a few paper towels (or in a tea towel) and squeeze out as much of the watery liquid as you can.

  • MAKE THE SAUCE: In a bowl, add the prepped grated cucumber, Greek yogurt, lemon juice, olive oil, minced garlic, salt, and pepper. Mix to combine the ingredients and let it sit for about 30-minutes before serving. Enjoy on top of Gyros, appetizers, or offer as a dipping sauce! :)
