Rich Creamed Corn From Scratch

Homemade creamed corn — sweet & creamy corn kernels in a velvety cream sauce. This recipe pairs well with so many different entrées and sides, including my Mexican Cornbread and Jalapeno Cornbread recipes!

Homemade Creamed Corn

I’m not sure what it is about corn, but it just makes everything taste better. Corn is such a diverse ingredient, it’s vital to so many different cuisines around the world, and it can be made into so many delicious things!

Homemade creamed corn was something I stumbled upon. For years if I ever needed it, I’d just take the easy route and snag a can of it. But one day I was making my Mexican Cornbread recipe and midway through I realized I didn’t have any canned creamed corn on-hand. I had been wanting to get away from using canned stuff anyway, so I decided I’d figure out how to make it from scratch.

Boy am I glad I did! It turned out way better than any canned version that I had purchased before. It’s fresh, sweet, and I finally had the thought of blending some to adjust the final texture/thickness.

The beautiful thing about homemade creamed corn is you can literally make it how you want it. Whether it be seasoning, custom add-ons, extra cream, or deciding to blend more or less than what this recipe calls for. Since you’re building it from the ground up, you can adjust one or every step of the process to make it your own.

Customize Your Creamed Corn

Creamed Corn with Garlic and Parmesan Cheese Recipe

Speaking of making this recipe your own, there are several things you can do to make it more suitable as a side to different cuisines. Here’s some ideas:

  • Combine with cooked minced garlic, grated parmesan cheese, and cilantro
  • Add chopped pieces of organic ham and crispy bacon bits
  • Mix in chopped steamed/baked broccoli and shredded cheddar cheese
  • Top with sauteed chopped jalapenos

Homemade Creamed Corn Recipe

Creamed Corn From Scratch

This homemade creamed corn recipe makes a sweet and creamy corn dish that pairs well with so many different entrèes! Get ready for sweet, tender corn kernels in a velvety cream sauce.

Ingredients
  

  • 1 onion, small, chopped
  • 3 1/2 tbsp butter
  • 4 cups fresh corn kernels (you can use drained canned corn)
  • 2 tbsp all purpose flour
  • salt and pepper, to taste
  • 1 cup milk, ideally whole
  • 1 cup heavy cream
  • 2 tsp granulated sugar
  • 1/4 cup parmesan cheese (optional), grated

Topping Options

  • ground black pepper
  • cilantro
  • OR fresh thyme leaves (or 1/8 tsp dried thyme leaves)

Instructions
 

  • COOK INGREDIENTS: In a pan over medium heat, cook the onion in the butter until translucent.
    Add the flour, salt, and pepper, cooking and stirring for an additional 3 minutes.
    Add the corn, milk, cream, and sugar, mixing to combine. Let it come to a boil while you continue stirring. Boil and stir for about 1 minute more.
    1 onion,, 3 1/2 tbsp butter, 4 cups fresh corn kernels, 2 tbsp all purpose flour, salt and pepper,, 1 cup milk,, 1 cup heavy cream, 2 tsp granulated sugar
  • BLEND: Take about 1.5 cup of the mixture from the pan and put it in a blender or use a hand-mixture to blend it smooth. Return it back to the pan with the mixture and stir back in.
  • FINAL STEPS: If you're choosing to add parmesan cheese, add it now, and over medium/low heat, melt cheese into the mixture then remove from the stove. Test the flavor and add more salt and pepper as needed (don't add too much pepper or it'll become hot/spicy).

  • ENJOY: Top with chopped cilantro or fresh thyme leaves (depending what you're pairing it with), and enjoy warm!

REHEATING INSTRUCTIONS:
Add leftover creamed corn to a pot over low heat on the stove.
